I would appreciate a little clarification about how 'Tonnage' restricts what can be used.
Initially I thought that a ship's tonnage was a limit on the total number of you can have in play. This would mean that a scout can effectively have only 1x100 ton and a free trader 2x100 or 1x200. However having re-read the rule book and looking at the example on page 19, I think that is probably wrong.
Looking more carefully at the side bar on p34 it seems to suggest that the tonnage is a limit on the size of each individual . The number of upgrades is limited by the number of each subtype which can be present. For example a scout ship can only use an with a tonnage of 100 but it can have 1 of each of the four subtypes so up to 4 in total.
Is that right or have I misunderstood?

Your second understanding is correct.
To be specifically clear, the number of a may attach is limited by the slots bar. But any attached must have a tonnage requirement equal to or less than the tonnage.
So the Beowulf may attach multiple 200 ton , provided it has the slots.
